We love making these delicious apple muffins at the BB4CK kitchen!

1 ½ cups sugar

2 eggs

1 cup oil

1 tbsp. vanilla

3 cups flour

1 tsp. salt

1 tsp. baking soda

1 tsp. cinnamon

3 cups diced apples (peeled and cored)

Brown sugar for topping (optional)

Preheat over to 350°F, lightly spray muffin pans with non-stick spray.

Cream together eggs, sugar, oil and vanilla.

In a separate bowl, mix flour, baking soda, salt and cinnamon. Add the dry mixture to the creamed mixture, mix until combined. The batter will be thick. Fold in the diced apples.

Fill muffin cups about ¾ full. Sprinkle muffin tops with brown sugar.

Bake at 350°F for 15 to 20 minutes.
